Postmenopausal women with Type 2 diabetes may improve some symptoms with the use of safflower cooking oil, according to Ohio State University researchers. The researchers found that women who include about one and two-third teaspoons of safflower cooking oil to their diets may improve their cholesterol, blood sugar, insulin sensitivity, and inflammation. Data analysis showed that the study participants improved their condition after just 16 weeks of supplementation. Insulin sensitivity increased by 2.7%, while C-reactive protein decreased by 17.5%, blood sugar levels improved by 11 to 19 points, and good cholesterol rose 14%. The researchers noted that safflower oil is rich in linoleic acid, a polyunsaturated fatty acid, which may be responsible for the improvements. The research appears online and is scheduled for future print publication in Clinical Nutrition.
