Poached Salmon with Lemon Pepper Butter

 

 2 Servings   Per serving: 2.7gm CHO, 4.1oz PRO

 

Ingredients:

2 Cups Court Boullion            ----                          4.8                        0.48

8 oz. Salmon fillet, skin on                                    ----                         48

2 Tbsp  Lemon Pepper Butter                                0.65                       0.35

 

 

Directions:

Make Court Bouillon and Lemon Pepper Butter and keep warm.  In a covered sauté pan large enough to hold the fish in one layer, heat Court Boullion to about 165 degrees F. Place salmon in it, cover, and simmer gently for 10-12 minutes, or until fully cooked.  Remove fish from poaching liquid and drain.  Divide fish, place on 2 warm plates, and cover with Lemon Pepper Butter.

  

PREPARING Court Bouillon

 

     8 servings, 1 cup each     Per serving  2.5 gm CHO,  0.05 oz. PRO

2 ½ quarts water                                                      ------       -----                     

½ cup vinegar                                                               ------                  ------

2 Tbsp salt                                                                     ------                  ------

½ pound onions, peeled and sliced                             19.2                    2.4

Pinch dried thyme leaves                                           _____                     ____

1 ½ bay leaves                                                             ____                  ____ 

½ bunch parsley stems                                                _____                 ____

¼ tsp black peppercorns                                              0.35                    0.05

 

Directions:

Combine all ingredients except peppercorns in a large saucepan.  Simmer for 50 minutes.  Add peppercorns and simmer for an additional 10 minutes.  Strain, cool, and store in airtight container in refrigerator.

 

PREPARING Lemon Butter

 

4 Servings.  2 Tbsp each                    Per Serving                 0.7gm CHO,  0.05 oz PRO

½ cup (1 stick) butter, softened                                      ____                      1.0

2 Tbsp lemon juice                                                       2.6                         0.2

1/8 tsp salt                                                                    ____                    ____

1/8 tsp white pepper                                                     ____                     ____

Lemon pepper seasoning, to taste                               ____                    ____

 

Directions:

In a food processor, combine all ingredients until smooth.  Roll butter into a 1 – inch- diameter cylinder.  Do so by placing on parchment paper or on plastic wrap.  Roll butter in the paper or wrap until you have a 1 inch diameter cylinder.  Refrigerate until needed.  Slice into ¼ inch pieces to use (3 slices = 1 tablespoon).
