Chicken Shish Kebab with Vegetables

  

1 Serving   Per serving: 12gm CHO, 4.3 oz PRO

 

Ingredients:

                                                                           CHO (gm)             PRO (gm)

4 oz. Chicken, cut into 1 – inch cubes                  ----                          24

1 oz yellow onion, cut into 1 –squares                  2.4                         0.3

1 oz red bell pepper, cut into 1 –inch squares       4.8                         0.7

1 oz green bell pepper, cut into 1 –inch squares   4.8                         0.7

Salt and Pepper to taste                                        -----                       -----

  

Directions:

Thread chicken, onion, and pepper pieces alternately on skewer.  Season with salt and pepper and grill until chicken is fully cooked.

  

PREPARING POWDERED ARTIFICAL SWEETENERS

 

TIP:  as you know, the paper packets containing granulated, so called sugar-free sweeteners usually contain about 96 percent glucose, making them inappropriate for diabetics.  You can prepare your own granulated sweetener for use in some of the recipes posted on this site by crushing or grinding Equal (aspartame) tablets (not packets) or saccharin tablets in one of the following ways:

 

  • between two spoons
  • in a pepper mill
  • in a small electric coffee grinder

 

Aspartame (but not saccharin) will lose its taste if added to food before cooking, so it must be used only after cooking.  You may prefer to use stevia, since it is sold as powder or liquid and is not degraded by heat.
