Saturated Fat Is... Okay?

Saturated Fat Is... Okay?: Good news for meat and dairy lovers. Your heart-attack-on-a-plate hamburger may not actually cause heart attacks! The American Journal of Clinical Nutrition just published an analysis of 21 studies that followed 350,000 adults for 5 to 21 years. The conclusion: there's no clear evidence that saturated fat intake is linked to heart disease. The study authors say that more research needs to be done on what nutrients replace saturated fat when they are removed from a diet. Replacing them with unsaturated fats can lower cholesterol, but adding refined carbohydrates may have negative consequences. See this week's Item #7.
