Whole grains/fiber Recent studies have provided preliminary evidence for reduced
risk of diabetes with increased intake of whole grains and dietary
fiber (27,696,697).
In both the Nurses’ Health Study (27)and the Iowa Women’s Health Study (697),
increased intakeof whole grain food was associated with significant
reductionsin incidence of type 2 diabetes. A higher glycemic load,
calculatedand applied to food frequency data, was related to
increasedincidence of diabetes in men (118)
and women (119).
The glycemicload is defined as the product of the glycemic index
value ofa food and its carbohydrate content in an average serving.
Itincorporates both the quality and quantity of carbohydrate
consumed.However, glycemic load or glycemic index was not related todiabetes incidence in the Iowa Women’s Health Study (697).Diabetes Care 25:148-198, 2002
